you didn't make it right then. most likely you got egg yolk in your whites
I had to make mine 3 times to get it jiggly, fluffy and delicious! Keep on working. Also make sure your egg whites are really whipped properly and you can try put vanilla extract in the cream cheese mixture when it's still in the pot.

A very easy cheesecake recipe
Ingredients:
Cream cheese 120g
Egg 3
White chocolate 70-80 g
Steps:
Melt the chocolate and cream cheese together
Cool it a little bit and add egg yolk in it
Mix them
Whip the egg white until it becomes creamy
Mix the 2 bowl of mixture together slowly and gradually
Bake it and check it every 10 minutes until you can poke a toothpick in it
Freeze it in the fridge for an hour
